When coffee is ‘processed’ at its origin, it goes through several stages of preparation to remove the fruit and dry the seeds before export. During the fermentation stage of the washing process, freshly hulled coffee seeds are allowed to soak in water tanks to remove any clinging fruit. Natural yeasts drift in and munch on the remaining sugars which breaks down the fruit.

This lot’s fermentation was
 controlled by using a ‘starter’ yeast culture to begin fermentation. A starter 
culture will multiply more rapidly for a more thorough fermentation which produces 
more sweetness and fruit complexity. Expect flavors of green grape, cooked 
pineapple, and navel orange.
