Natural Sugarcane Process

In Colombia, where sugarcane is bountiful, high scoring micro-lots are soaked in a natural extract derived from fermented sugarcane and naturally occurring acetic acid to remove the caffeine. After this, the beans are cleaned and re-dried before export. This process avoids the high heat and pressure of other methods which can be detrimental to the flavor of the beans.
